London: Macmillan & Co, 1879. First British Edition. Original Cloth. Very good. 8vo (23cm). In the publisher's cloth, black embossed rules to cover, gilt titles and rule to spine. Dark purple endpapers. xvi, 418 + [2] publisher's advertisement. Errata to xii. 12 tissue guarded plates and 85 illustrations and line drawings. Previous owner's inked name to half title of A. E. Taylor - possibly the English idealist philosopher, (1869-1945). A shadow, likely from a removed ex libris label, to front pastedown. Rubbed to spine ends and tips, joints slightly rubbed, minor spine lean, short crack to gutter of rear endpaper - not to joint. A well read copy, but the plates in fine condition, bright and fresh with unfoxed tissue guards. Binding firm, pages clean and unmarked, overall a sound copy. Translated from 'Études sur la Bière' (1876), in which Pasteur demonstrated that bad beer came about from microorganisms in the air, and not the previously held belief from some form of spontaneous generation. It also emphasised the importance of yeast and how to isolate and refine it. A milestone work on the topic and one of Pasteur's many outstanding contributions to microbiology.
