A great deal of wealth from the East India Companies as well as their freedom was willed to the slaves of the region by a landholder who had been an official of the company. Because of the wealth of the Depok area, the location became the center of the various cuisines from origins including Bali, Celebes, Sumatra, and the Moluccas. Depok was the pinnacle of cooking in this spice-rich society, and Leonie Samuel seems to have been born to be one of the stars of the field. She opened her first restaurant at the age of 17 where she presented dishes from Dutch and Indonesian cuisines, as well as Chinese menus in honor of her Chinese grandmother. She emigrated to the Netherlands when she was 20, and then to San Rafael, California in 1960 where she opened "The Rice Table," rated by a food critic as: "The best Indonesian restaurant in the United States and probably the world."This book was a labor of love, and presents exotic menus that make the mouth water just to read the recipes. A glossary is included to provide more common names for some of the spices.
