Two volumes, quarto (310x240mm) quarter bound tan pebble-grain morocco, gilt lettered spine ruled into 6 compartments, marbled boards and endpapers, original wrappers to upper boards, all edges marbled: Vol I [2],viii,frontispiece,303,[3]pp, seventy-five out of text engravings; Vol II [6],427,[3]pp, ninety-one out of text engravings. In French.
Boards, binding and edges rubbed, scuffed and lightly soiled; corners gently bruised; occasional light foxing and offset toning (from the tissue guards) rarely affecting the text or plates; a number of tissue guards remain complete; generous margins.
Between 1845 and 1880, Dubois was chef to the Rothschilds, a Russian ambassador, the King and Queen of Prussia and the Emperor of Germany. During this time he also authored a number of significant culinary books aimed at professionals highlighting with extremely fine engravings the table settings and modes of the Belle Époque. He is credited with introducing service à la russe to Western European dining, and the term chef as the person in charge of this service. His focus on centre-pieces and grand 'pieces montees' continued the fashion established by Carême but took it to new heights.

A reasonably scarce significant work. Filled with striking full page engravings of kitchen equipment, centre-pieces, 'architectual' componentry and elaborate dishes.
