The Culinary Arts Institute can be traced back to an 1860's New York fashion magazine called the Delineator, through which the Butterick Co. sold their sewing patterns. Leonard Davidow, a cook book publisher, purchased the rights to the Delineator's cooking material. He formed the CAI to publish these recipes in cook books and other formats. Ruth Berolzheimer, the second female science graduate of the University of Chicago was hired as editor. Every effort is made to ship all books and other items within 24 hours. Unclipped jacket has moderate edge-wear with chips, tears and creasing.

Boards have mild edge-wear with slight rubbing to surfaces and bumping to corners. Lettering is darkened. Moderate sunning to spine and edges with crushing to spine ends. Visible wear marks to boards.

Orig. published in 1939, this is a 1957 edition, in the famous "Prudence Penny" binding consisting of blue cloth-covered boards stamped with a deep red design & lettering to front & spine. Penny was the "Home Economics Expert" at the San Francisco Examiner newspaper, & the binding was patented in her name.
